Vegan Brown Rice Pudding

Ingredients (for 4 servings):
1 cup brown rice, rinsed and drained
3 cups soy milk
1/4 cup agave/maple syrup
1 tsp cinnamon + more to serve
1/4 tsp salt
1 cup coconut milk (not canned)
1 tsp vanilla extract


Instructions:
1. Add rice, soy milk, agave, cinnamon, and salt to a non-stick saucepan and bring to a boil.
2. Reduce heat to low, cover, and simmer for 45 minutes.
3. Stir in the coconut milk and simmer over low heat, stirring occasionally, until most of the liquid has been absorbed.
4. Remove from heat and let sit covered for 20 minutes.
5. Stir in the vanilla extract. If it's too dry, stir in some more coconut milk.
6. Serve cold or at room temperature with a pinch of cinnamon on top.
